[Washington, DC] – Potomac Hospitality Group (PHG) recently hosted over 100 guests for the latest installment of Fried Chick'n & Champagne: A Secret Supper Experience. Hosted at Marcellus Farms Estate— a Black-owned private 40 acre estate — the "Moroccan Nights" themed event delivered a vibrant, jewel-toned evening featuring live performances and entertainment, farm-to-table fare and an immersive experience in the sights, sounds and flavors of northern Africa.
The upscale and exclusive event invited guests to embrace the spirit of Moroccan marketplaces with bold colors, rich flavors and an unforgettable dining experience. Since details of the experience remained a mystery until 48 hours before the start of the event, guests were surprised by delicious appetizers, Moroccan drummers and belly dancers upon arrival, getting a glimpse into what would become an amazing star-lit evening.
“For this Secret Supper, we wanted to transport our guests to a night in Marrakech, " said Candi Dailey, CEO of Potomac Hospitality Group. “We transformed Marcellus Farms with plush cushions and low sofas for traditional Moroccan seating, intricate tablescapes, and cultural elements like belly dancers, fire breathers and traditional Moroccan dishes, I’m proud of the team for curating an immersive and authentic experience, serving as a true celebration of food, culture and community.”
The culinary team, led by culinary director and executive chef Jerome Grant, masterfully infused Moroccan-inspired flavors with PHG’s signature Southern charm throughout the evening, creating a dining experience like no other. Guests enjoyed traditional mezze to open up the meal, followed by ras el hanout spiced chicken, taktouka, coal fired swordfish and prawns, chermoula spiced lentils and couscous.
"The Secret Supper Experience brings a farm-to-table elegance that is unique to this event," said Chef Grant. "The four course meal served family-style with wine at every course allows our guests to connect and share in the experience together. Our Secret Supper menu is always crafted with flavor and culture in mind, intentionally fostering meaningful connections to both the food and the culture.”
Chef Grant developed a signature spice blend for the event, inspired by the Moroccan staple ras el hanout. Each guest went home with a bottle of the spice blend and a recipe.
Guests closed the night with two desserts - baked orange cardamom pudding and makroud el louse. Potomac Hospitality Group’s executive pastry chef Padua Player exclaims, “I take immense pride in crafting desserts that not only delight the palate but also reflect the rich cultural narratives we celebrate at each event," said Chef Player. "The Secret Supper Experience: Moroccan Nights allowed us to merge tradition with innovation, creating sweet endings that resonated with our guests and left lasting memories.”
